Is there a way to disable the project year so it doesn't show?

where does it show? If you mean renaming your exhibit then Edit it, click on the exhibit title, rename it and hit save.

When i create a new exhibit , it comes up with a drop menu of "project year"

But itt doesn't show in the frontend (your actual website)... just leave it as is.

Turn off chronological mode for that section...
