Actually there's no need for it anymore - ...but what are you trying to do anyhow?
The site theme folder is now replaced by the default theme folder.
Duplicate the default theme folder and work with the duplicates...
Im trying to change the look of the theme slightly, and any tutorials I find tell me to 'switch to advanced mode' and 'go to style.css in the 'site' folder'
Where can I find the default theme folder?

The instructions are for the Legacy version of Indexhibit and not Version 2.
As I mentioned above the site theme folder is now replaced by the default theme folder.
Duplicate the default theme folder and work with these files.
Not finding the default theme folder...
it's in the ndxzsite folder.
