I can see that I have a bunch of plugins in ndxzsite > plugin but only a handful of them load?

Also, where can I find the mobile plugin?

Nope, they don't. Not all plugins are meant to be displayed via the studio. You get the new things from downloading new Indexhibit - everything is there (update your site).
